I’ve been baking.
Simply goats’ cheese, caramelised red onions (sweat onions in butter & add brown sugar) & thyme, nestled in a short crust pastry case. A delicious lunch time treat, served warm. Next time I make these I plan to use french goats’ cheese (I used English, this time), it’s creamier.
I made tartlets too, with left over pastry & filling.
